The olive groves of the island today include a number at least 35 million trees and no significant diversity.Crete only produces about 5% of the olive oil in the world and about 90% of it is high quality  extra virgin olive oil.

                                            OTHER OLIVE PRODUCTS

  •  The olive fruits prepared in different ways depending on the variety, used as an addition to breakfast, in salads , but also in many foods and are an excellent, tasty and healthy food .
In Crete are many well known traditional manufacturing methods used in homes for family use in small industries for marketing. The best known of these are:
  • Green olives in brine made ​​with crushed fruit variety Tsounati the Mouratolia .
Black olives, salted or in brine made ​​from the thick fruit varieties ( Throumbolia Chondrolia , Tsounati ) small fruited and most widespread variety on Crete Lianolia or Coroneiki .
  • The olive wood used in antiquity as a fuel substance, for wooden architecture , for piles in connecting columns swabs for agricultural and other tools , but also for making idols of gods and other wooden statues.
Today the olive wood is the raw material for making furniture and wood carvings . In Crete there are quite a few excellent craftsmen who produce real masterpieces from olive wood . The tough and durable at the same time excellent looking wood with its numerous natural formations is an excellent raw material for making tables , chairs, beds and many other decorative items.
  • The leaves and olive branches used as mattresses in the old days , now used for animal feed and fuel .
Olive leaf removed from the wrist to the mills used as raw material for producing ( compost ) fertilizer suitable for the lubrication of olive groves for the production of organic olive oil .
